Galley latches are classified as knobs — one of the small parts expressly enumerated in the FAA's flammability regulations.
Under 14 CFR Part 25, Appendix F, Part I(a)(1)(v) (transport category) and 14 CFR §23.853(d)(3)(v) (normal and commuter category), small parts such as knobs, handles, rollers, and fasteners that would not contribute significantly to the propagation of a fire are excepted from flammability test requirements.
